Icelandic Cusk or Brosme can be considered an underutilized fish and given its sweet flavor profile, should be much more known than it is. It can be used as a replacement for cod as it is from the same family. It is a fish that has the same type of head as cod or haddock, but the rest of the body looks almost eel like, with its dorsal fin running the length of the body. Brosme prefers to live in deep waters and is caught often with haddock and cod. Our brosme stocks are very carefully managed, are MSC certified and adhere to the Iceland Responsible Fisheries management guidelines.
